Ingredients

  • 1 1/2 pounds ground beef

  • 2 tablespoons Coyote Taco Seasoning

  • 1 teaspoon Grizzly Espresso Steak Run (optional)

  • 1 can (16 ounces) pinto beans, drained and rinsed. (Kidney beans are excellent, as well!)

  • 1 can (11 ounces) whole kernel corn, drained (Or you can substitute 1 cup frozen corn.)

  • 1/2 medium onion, chopped into small pieces

  • 1 medium jalapeno pepper, seeded and chopped (Can substitute 1/2 green bell pepper for milder taste)

  • 1 cup shredded Cheddar cheese

  • 1 cup coarsely crushed tortilla chips

  5. Bake 10 minutes or until cheese is melted. Serve with your choices of sour cream, salsa, pico de gallo, etc. if desired.
