Phenomenal Nachos

Sometimes you need to whip up something quick, easy, but very tasty. Well, I’ve got just the thing for you. This is great for when the kids are looking for a snack, or when friends drop in, or you just don’t feel like fixing a big, involved dinner. Super Nachos to the rescue!
Ingredients:

Several handfuls of your favorite corn chips: square, triangle, rounds, white or yellow. Whichever is your preference

1 pound ground beef

½ cup beef broth

1 – 2 rounded Tablespoons of my spicy Coyote Taco Seasoning.

1 medium sweet or hot pepper, diced

1 medium tomato, diced (or you could substitute a small can of Rotel Tomatoes and Peppers)

½ medium onion, chopped
-
¼ cup shredded cheddar, or Mexican blend cheese

¼ cup sour cream(optional) and/or ¼ cup guacamole (optional)
Directions

Crumble gound beef into a frying pan and cook until browned, stirring frequently to break it up and ensure even browining.

Drain the beef and return to pan, with heat on medium low.

Stir in 1 rounded Tablespoon of my Coyote Taco Seasoning (Suggestion: If you prefer it spicier, add up to 1 more rounded Tablespoon). Add the beef broth and stir to mix well.

Simmer for approximately 10 minutes. Add more broth if the mixture gets too dry.

Spread 1/4 of your tortilla chips onto a plate, then spoon 1/4 of the meat mixture over the chips. Top with shredded cheese, tomatoes, peppers, onions, sour cream, guacamole, and/or any other tasty toppings you wish.
